•Grape Variety : 100% Pinot noir
•Harvest : beginning of September at optimal maturity after ripeness control by berry tasting, hand-harvested by a small team during 12 to 15 days. Parcel harvest for masceration and vinification in small vats.
•Vinification: De-stemming, fermentation in stainless steel tanks for 2 to 3 days with pumping over. Then racking, this is a saignée rosé. End of fermentation in barrels then bottled for prise de lousse. No malolactic fermentation.
•Disgorging : After a minimum of 5 years maturing on laths. Liqueur de tirage with a low dosage (2g/L).
•Tasting notes: Expressive and open on notes of fruits such as redcurrant, pineapple and morello cherry. Elegant with lightly woody notes and aromas of jammy fruit and almond. Very beautiful aromatic expression. The mouth is faithful to the nose, its crunchiness and structure are appreciated. The finish is enhanced by a touch of morello cherry brandy. A gourmet rosé!
•Food/wine pairing: with white meats or light fruit-based desserts such as Charlotte aux Fraises and fruit salads.
