As wine consultants in Bordeaux and in other historic wine regions, Derenoncourt Consultants explore the vineyards, testing techniques and listening to winemakers and their teams. These ongoing exchanges feeds our thinking and are a source of inspiration and innovation. Stems or whole bunches have traditionally been used in Burgundy, Beaujolais, the Rhône Valley and many other wine regions. We have been using this practice for many years with a certain empiricism, adapting its use on a case-by-case basis depending on the vintage, the vineyard and the type of wine sought. Since 2018, we have been studying this subtle element more closely in Bordeaux with a group of partner châteaux, an analysis laboratory and a perfumer, in order to refine its characteristics and benefits scientifically and propose a guide to its use.

With global warming now a major challenge for the wine and oenology industry, this work has convinced us that stem may be one of the tools that can help preserve the aromatic brilliance and enhance sapidity and balance on the palate. Discover the contribution of stem by tasting 6 wines from different estates and wine-growing regions: Château Larrivet Haut Brion, Pessac Léognan, Domaine Simon Blanchard, Montagne Saint-Emilion, Domaine Peter Sichel, Vallée de Cucugnan, Maison Lorgeril, Cabardes, Château Gigognan, Châteauneuf du Pape, Domaine Changarnier, Monthélie.
