This Cadillac Côtes de Bordeaux is a deep red colour with purple hues and a nose of black fruits and vanilla. The palate is ample, unctuous and spicy. The finish is long and powerful.
Terroir : Clay-limestone soils
Winemaking : Regular sampling of grapes to monitor ripeness; separate vatting for the different grape varieties; pre-fermentation cold maceration to obtain primary red fruit aromas and floral notes. Long traditional vatting in temperature-controlled tanks for 18 to 28 days; malolactic fermentation after running off to soften the wines. This wine is aged in barrels for 12 months in underground caves. The wine is bottled in our own cellars.
