
The Hauck family emphasises controlled yields and manual harvesting as part of their commitment to producing aromatic grapes. In the spirit of innovation and curiosity, they explore a range of different grapes including Riesling, Silvaner and the classic white burgundy grape varieties Pinot Gris, Pinot Blanc and Chardonnay for whites and Pinot Noir, St Laurent, Merlot and Cabernet Sauvignon for reds. Hauck has also ventured into growing less common varieties like Auxerrois and Albariño, the latter being a proactive adaptation to evolving climatic conditions.

In 2023, Hauck unveiled "mystique", a natural wine derived from the Scheurebe grape, a variety with deep roots in German viticulture. The minimal intervention approach used during the production of this wine allows the innate characteristics of the Scheurebe grape to shine, according to the winery. As its name suggests, "mystique" symbolises the enchanting and somewhat enigmatic nature of natural wines, reflecting Hauck's ambition to harmonise traditional practices with contemporary trends.
